Some of the nicest was from a honey farm above the Loire valley in France. Homey has so many different tastes and flavours depending from what plant the bees have have been feeding. Guess if yours tastes 'wonky' they may have been on dirty lime trees. I you like the taste but not the bits, try heating the honey gently and then strain it through very fine muslin. Oh and honey granulates as the weather cools.
